Monday, 12 April 2021. The Repsol Guide, which has just presented its Repsol Guide Suns Gala at the Victoria Eugenia Theatre in Donostia, has awarded its first Sun for Sustainability to Eneko Atxa. This is the first time that this award has been presented and, in the words of the Guide itself, ‘his restaurant, Azurmendi (3 Repsol Guide Suns), is an example of coexistence with nature, taking advantage of the resources that surround it and working together with artisan producers’.
From now on, the Repsol Guide will award this new Sustainable Sun every year, which in this edition has been done together with ‘Alimentos de España’. The distinction seeks to highlight gastronomic projects that contribute to reducing environmental impact, that promote joint work with local producers and advocates sustainability in their business approach. ‘I didn’t want to invade when building the restaurant, I wanted to coexist with the environment itself’, emphasized the chef.
‘It is essential to highlight sustainable projects, which are committed to respecting the environment and energy efficiency. Eneko Atxa’s commitment to making the most of the environment’s resources and paving the way for other restaurants to adopt measures that minimize climate impact’, highlighted the director of Guía Repsol, María Ritter, at the presentation of the event.
